Easy Chicken Stew3 - 4 boneless chicken breasts (cooked & chopped into chunks) 2 large potatoes, peeled & cut into chunks 1 - 2 zucchini cut into chunks (peel optional)or your favorite vegetable 1 can (14 oz approx) corn or try it with cream style corn 1 can (28 oz approx) diced tomatoes, don't drain (you can use whole tomatoes) 1/2 cup each bbq sauce and ketchup
Combine all in your crockpot (if you feel you need more liquid in your stew add some chicken broth. Cover & cook on low for 6 or more hours. Serve with garlic bread. Enjoy! ---------------------------------------------------------------Chicken Noodle Soup2 - 14 oz. cans fat free Chicken Broth (from the pantry) 1 carrot shredded 1/2 cup finely diced celery 1 small white or yellow onion Skinless, boneless chicken (chicken tenders work real well) Salt and Pepper Wide Egg Noodles Boil your Chicken in a pan of water until cooked. Drain water from chicken and cut it up into bite size or a little larger pieces. Pour the 2 cans of chicken broth and 1 can water into your crockpot, add the shredded carrot, celery, onion, chicken, salt and pepper to taste. We like extra pepper so we add a little more. Cover and put your crockpot on low, let it cook all day, 6 or more hours. About an 30 - 45 minutes before you are ready to eat add your egg noodles, make sure your crockpot is on low, so the noodles can cook, test and see how done they are at 30 or 45 minutes. Serve with saltine crackers or whatever you like with your noodle soup. Enjoy!
Easy Stew1 pound stew meat (I use whatever meat I have in the freezer & just cut it up like stew meat, my favorite to use is boneless pork or beef rib meat) 1 - 2 potatoes - peeled & cut into 1-2 inch chunks 1 white onion - peeled & quartered baby carrots or you can peel & slice regular carrots (I like the flavor of the baby carrots better) 1 package onion soup mix or stew mix (note: it does not have to say for crockpot cooking) 1 T minced garlic (optional) any other vegetables you may want to add
The easiest way to make this stew is to put meat, onions, potatoes, carrots, garlic and any other vegetables you may want to add (sometimes to make this a little different I'll add mushrooms, squash or peas) into the crockpot. Mix the onion soup or stew mix with about 1 1/2 cups of water and add to the crockpot, mix all together, cover and cook on low for about 8 hours. Salt & pepper to taste when you get home. Put the crockpot on low when you get home until you are ready for dinner. If you have a little more ambition in the morning, instead of just putting the meat in the crockpot, you can flour the meat (I put four, salt, pepper and garlic powder in a baggie) and brown it in some olive oil and then follow the above instructions.

Bacon, Mushroom and Tomato SoupBacon Mushrooms Onion - white or yellow 2 cans tomato soup
This one is so easy! You can prepare this when you get home from work & it only takes a few minutes. Take a couple cans of your favorite brand of tomato soup and pour into your crockpot, add about 1/2 to 1 can of water or milk your choice. Turn crockpot on low. Fry your bacon till somewhat crumbly and break apart into bite size pieces or you can cut your bacon up before you fry it if you want, so you don't have to break it apart later. Once your bacon is fried drain the bacon and then add the bacon to the crockpot also. Slice up the mushrooms and dice the onion and saute them in either a little bit of the bacon fat or in some olive oil. Drain the mushrooms and onions and add them to the crockpot, mix all together and leave crockpot on low until ready to serve. We like to have grilled cheese sandwiches with out Soup. Enjoy!--------------------------------------------------------------- Tortilla Soup w/ ChickenChicken boneless and skinless (chicken tenders or breasts work good for this) 1 small can of Chicken Broth (or save broth from cooked chicken) 2 cans of diced tomatoes (15 oz each) 1 small can of chopped green chiles (mild) Fresh or minced garlic about 1 tsp (optional) 1 small diced white or yellow onion 1 tsp cumin, salt & pepper to taste Flour or Corn Tortillas
Mix together in the crockpot everything above except the chicken & tortillas. The tortillas we'll use right before serving. You have two options with the chicken you can boil it in the morning and use the broth from it instead of canned broth or just add the cooked or uncooked chicken to the mixed ingredients in the crockpot, the choice is yours. Once the chicken has been added cover the crockpot and cook on low for 6 to 8 hours. If you're not ready to eat at that time put your crockpot on warm until almost time to eat. Add the tortilla strips and cook on low for another 20 minutes to 1/2 hour, if you want you can also add some cilantro with the tortillas. You can garnish each bowl of soup with shredded cheese (optional, I like to add Monterey Jack cheese, which we keep on hand). Enjoy!
